Quick & Easy Baked Cod with Lemon Butter

A simple and healthy way to cook delicate white fish! Cod fillets bake up quickly in a foil packet with lemon and butter for a moist and flavorful result with easy cleanup.

Ingredients:

  • 2 (6-8 ounce) cod fillets
  • 2 tablespoons unsalted butter, melted
  • 1 lemon, sliced into thin rounds
  • 1 tablespoon fresh dill or parsley (or 1 tsp dried herbs)
  • Salt and freshly ground black pepper

Instructions:

  1. Preheat Oven & Prep: Preheat oven to 400°F (200°C). Tear off two large pieces of aluminum foil.
  2. Prep Cod & Assemble Packets: Place each cod fillet in the center of a piece of foil. Drizzle melted butter over each fillet. Season generously with salt, pepper, and dill (or dried herbs). Top each fillet with lemon slices.
  3. Seal Packets: Bring the edges of the foil together and crimp tightly to seal, creating a packet.
  4. Bake: Place the foil packets on a baking sheet. Bake for 12-15 minutes, or until cod is opaque and flakes easily with a fork.
  5. Serve Hot: Carefully open the packets (watch for steam!) and serve the cod with the lemon slices and pan juices.
